Unless you’ve been living under a rock recently you’ll have heard about the relaunch of Star. It is a venue I hope to frequent very soon, in the meantime however I thought I’d tell you about the latest offering to be revealed in The Star’s stunning new redevelopment, Cherry. An intimate cocktail bar located in the heart of Sydney’s new entertainment destination. Set to be one of Sydney’s most beautiful cocktail bars, Cherry offers guests stunning views across Sydney harbour and the city in luxurious style.
An oval island bar located at the front of The Star’s gaming floor, Cherry has dark sleek tones with splashes of pastel colours and modern textures. Located in a 160 square metre room the welcoming yet semi-formal bar has a mixture of plush lounges, cosy corners, bar stools and elevated lounges.
The bar team at Cherry will be serving up six quality beers, a selection of quality wines exclusively designed by a Sommelier and if there is a spirit Cherry doesn’t have it’s not worth drinking. With four work stations that are all cocktail preparation ready, an in-house mixologist will be serving up cocktails with a seasonal fusion flavour.
Guests can enjoy one of the signature ‘Cherry Cocktails’ such as the Lemon Cherry Tart, made with Belvedere pure vodka, mozart dry chocolate liqueur and dry vermouth shaken with lemon juice and lemon butter served straight up as a martini and topped with a cherry foam and brandied cherry.
Other signature cocktails include the Smokin’ Margarita, served short over ice with a smokey mescal spray; the Apple Trea, Ron zacapa shaken with fresh cloudy apple juice and honey served short with chocolate bitters and rosemary; and the Cherry Cola for Lola, Belvedere black raspberry vodka, cointreau, plymouth gin, havana blanco (a fave of mine!) and cherry brandy served long then topped with coke, cherry foam and cola pop rocks (wow – mental note to self to give this a try!!).
Entertainment at this fun new bar will also be one of the major appeals with Sydney’s best DJs mixing tunes from Thursdays to Sundays. Resident DJs will set the mood, from chilled house beats and funk and soul to pumping house party tunes. There will also be specialist DJ percussionists and live performances with saxophone accompaniments.
Cherry opens to the public on Thursday 15 September, 2011 and can be found on Level One of The Star. Opening hours are Monday to Wednesday 5pm-1am, Thursday – 5pm-2am, Friday and Saturday – 4pm-4am and Sunday – Midday-2am.
